INGREDIENTS:
• 2 cans lump crab meat
• 1 green pepper
• 1 yellow pepper
• 1 red pepper
• 1 onion
• 1 tsp minced shallots
• 1 tsp chopped garlic
• 1 tablespoon Old Bay Seasoning
• 1 egg
• 1 cup mayo
• bread crumbs
• lemon
METHOD:
Chop peppers and onions very fine (I use a food processor) Saute pepper
& onion mixture with shallots, garlic, Old Bay seasoning and juice
from one lemon. Let cool. In large bowl mix egg and mayo, add cooled pepper
mixture, fold in crab meat, add about one cup bread crumbs, fold in neatly
as not to break up crabmeat. Form into patties, broil in broiler for about
eight minutes. Serve with a chipotle sauce.
