1 pound lean ground beef
1 pound lean ground pork
1 pound lean ground veal (or use 1 1/2 pounds each pork and beef)
2 beaten eggs
1/2 milk
1/2 cup fine dry bread crumbs
1 Tbs. salt
1/2 Tsp. pepper
Stuffing:
2 1/2 cup toasted bread, cut into squares
1/2 Tsp. thyme
1/8 Tsp. pepper
Mushroom liquor, water, or milk to moisten
Brown 1 Tbsp. minced onion
1 cup chopped raw mushrooms, sauteed in butter, or use 1 can canned mushrooms
PREPARATION:
Combine ground meats, beaten eggs, milk, bread crumbs, 1 tablespoon salt,
and 1/2 teaspoon pepper. Put half of the meat mixture in a greased baking
dish. Mix together the stuffing ingredients; spread over meat layer, then
top with remainder of meat.
Bake at 350 about 1 1/2 to 2 hours.
