1 1/2 pounds [680 g] lean ground beef
2/3 cup [160 mL] dry breadcrumbs
1 cup [250 mL] onion barbecue sauce, divided
1 egg, beaten
1 pack long grain and wild rice stuffing mix
1 pack frozen chopped spinach, thawed and well drained
1 large carrot, shredded
Preparation
Combine ground beef, breadcrumbs, half of onion barbecue sauce and beaten
egg.
Roll out mixture, between 2 sheets of waxed paper, into a 15 x 10-inch
[37.5 x 25-cm] rectangle.
Prepare stuffing mix according to directions; mix in drained spinach and
shredded carrot.
Spread stuffing over meat mixture.
Roll-up, starting at 10-inch [25-cm] side.
Thighly wrap; refrigerate for several hours or overnight.
Bake, unwrapped for 1 hour, into a preheated 350°F [180°C] oven.
Brush meat loaf with remaining half of onion barbecue sauce.
Bake for 15 minutes more, until glazed.
