Jiffy banana bread recipe
Pecan Banana Bread

Ingredients:
2 cups all-purpose flour
1/2 cup butter
3/4 cup brown sugar
2 eggs (beaten)
1 teaspoon baking soda
1/4 teaspoon salt
3 very ripe bananas
1 cup chopped pecans

Directions:
Preheat oven to 325F.
Lightly grease a loaf shape baking dish.
In a large bowl combine flour, salt and baking soda.
In a seperate bowl cream together butter and brown sugar.
Stir in eggs and mashed bananas and mix well.
Stir banana/butter mixture into flour mixture and just blend.
Fold in chopped pecans. Do not over mix.
Pour batter into loaf shaped baking dish.
Sprinkle top of bread with a few chopped pecans.
Bake at 325F for approximately 45 minutes or until center of cake is
baked through.
Cool in baking dish for 10 minutes and transfer to wire rack to cool
completely
