1/3 cup shortening
3/4 cup brown sugar packed
2 eggs
1 3/4 cups whole wheat flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup mashed ripe bananas (3 large bananas)
1 cup chopped walnuts

Preparation
Banana Nut Bread
Preheat oven to 350º F. In a large bowl cream together shortening,
sugar and eggs. Beat well. In another bowl mix together flour, baking
powder, salt and baking soda. Add this dry mixture to creamed mixture.
Stir until well mixed. Stir in mashed bananas and walnuts, blending well.
Pour mixture into greased 9" X 5" X 3" loaf pan. Bake at
350º F for about 50 minutes or until done. Remove from pan and allow
to cool
