Banana Bread I
1/2 cup shortening 1-1/4 cups sifted all-purpose flour
1 cup brown sugar 3/4 teaspoon baking soda
2 eggs 1/2 teaspoon salt
3/4 cup mashed ripe
banana (lakatan)
Cream shortening and sugar until fluffy.
Add eggs, one at a time, beating well after each addition.
Stir in banana.
Sift together dry ingredients; add to banana mixture; mix well.
Pour into greased 22- by 22- by 5 cm. pan.
Bake at 350 degrees Fahrenheit for from 30 to 35 minutes.
Yield: 6 servings.
