Banana Nut Bread Recipe
and the nuts are optional!
Ingredients:
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
2 eggs, lightly beaten
3/4 cup oil 3 tablespoons buttermilk
3 bananas, mashed (about 1 cup)
3/4 cup chopped pecans or walnuts or your favorite nuts (optional)
Preheat oven to 325ºF. Grease 8-1/2 x 4-1/2 x 2-1/2 loaf pan--set
aside.
Sift together flour, baking soda and salt. Add sugar, eggs, oil and buttermilk--stir
to blend. Fold in bananas and pecans (optional). Pour into loaf pan.
Bake 350°F for about 1 hour 10 minutes; or, until toothpick comes
out clean. Cool in pan 15 minutes.
