Makes 3 to 4 Servings
Ingredients:
1 Tablespoon butter
1 Tablespoon olive oil
2 boneless chicken breasts
2 cloves garlic, mashed
1 small onion, julienned
1 cup fresh mushrooms, sliced
1/4 cup Champagne - Brut
1/2 cup chicken broth
1 teaspoon dry mustard
1 teaspoon fresh thyme, chopped 1 teaspoon fresh Italian parsley, chopped
Salt and pepper to taste
Directions:
1. In a large sauté pan, heat butter and olive oil over medium
high heat. Brown chicken breasts on both sides, about 5 minutes per side.
Remove and keep warm.
2. In the same pan, sauté garlic and onions until brown. Add the
mushrooms and sauté for 5 minutes or until brown.
3. Add remaining ingredients and simmer for 10 minutes or until liquid
reduces by half. Pour over chicken breasts. Serve with lightly buttered
fettuccine noodles
